Abstract

This study aimed to identify the extent of effect of breed on the chemical structure and some physical qualities of poultry meat; and the extent of effect of sex on the chemical structure of the native poultry meat. This objective was achieved by doing two experiments; the first experiment was composed of 20 foreign chicks, a trade crossbreeding, while the second one was composed of 20 male chicks and 20 female chicks. In both experiments, the chicks were bred on ground under similar conditions. The findings of the study showed that there was a moral effect for breed on the chemistry structure of poultry meat; and sex at adulthood had a moral effect on the chemistry structure.
